How to Cook Pork Adobo
Simplest way on how to cook Pork Adobo
There are several ways by which “Pork Adobo” could be finished off, depending on whom the dish will be served. If it is for someone who loves to slather the sauce on their rice, this recipe is the best for him/her. But whatever his/her preference is, it’s just a matter of final adjustment at the end of the cooking process.
To prepare this type of dish, we shall need:
1/2 kilo pork liempo
1/4 cup vinegar
1/4 cup soy sauce
10 cloves garlic, crushed with skin on
1 pc laurel leaves
1/4 tsp ground pepper
1/2 cup water
1/4 cup cooking oil (for frying)
2 tbsp mayonnaise to thicken the sauce

Procedure:
- Marinate pork in vinegar, soy sauce, 5 cloves of garlic, laurel leaves and ground pepper for at least 30 minutes or overnight.
- Put marinated pork in a saucepan. Add 1/2 cup water. Bring to a boil without stirring. Simmer until meat becomes tender (around 30-40 minutes). Separate meat from sauce.
- In a separate frying pan, fry the pork until brown.
- In the saucepan, sauté the remaining 5 cloves of garlic until golden brown. Add the browned pork and slowly add the sauce where meat was cooked.
- Add 2 Tbsp of mayonnaise for creamier sauce. Mix and let simmer until the mayonnaise is dissolved.
